    In the post about making sparkling wine in the WW, the instructions make a nice soft sparkle in 24 hours, it won’t put a head on the wine. You are not drinking beer.
    If you want more sparkle in the wine, every 3 to 4 hours, or when you think of it, run the clarification system, no clarification required, no need to add water either, all you are doing is upping the anti on CO2, so don’t open the clarification pot, just drop the pressure a little via the V.P.R.V and give it a blast for 2 to 3 shots. You are running at almost 3BAR, so there is heaps of pressure, it does get absorbed well at 1Deg.C.
    This will hurry up the bubbles in wine.
    This system can work well with white wines also.
    Gassing the wines works better on sweet wines than dry wines.
    If you have a couple of flash looking wine bottles and corks, fill these on the bottler for a better impression, remember to remove the labels, I stick a hand written home made label on the wine bottle, creates a great effect.
